Overnight Oatmeal Parfait

Did anyone get outside to enjoy the 60+ degree weather today? I wish I could of gotten a run in outside, but my timing didn’t work out with the rain so I was stuck on the treadmill. However, I have a great oatmeal dish for those warms days you don’t want to eat hot oatmeal, plus you prep it ahead so it’s another great breakfast to grab ‘n go. It’s a combination of oatmeal and a yogurt parfait all wrapped into one and I think it tastes great! In our household I’m the only one who enjoyed this dish, David asked me what was in the paste he ate when he got home. (I guess not a good start by me trying to get him to breakfast during the week.) If you have had oatmeal in your smoothies and enjoyed then you will defiantly like this! If you make this and it tastes like paste, then I guess David gets another person on his side, but I’m sticking to my story, when I say it’s an easy, convenient, healthy, and great tasting breakfast! I mean we can’t agree on everything, can we?



Overnight Oatmeal Parfait

1/3 C old fashioned oats

1/3 C vanilla yogurt

1/3 C almond milk

1/4 blueberries

1 t cinnamon

1 T sliced almonds

You will need to create this dish the night before you plan on eating it, if you do it a couple days ahead that works too.  Mix the oats, yogurt, and almond milk until combined, do this in the dish you will be eating the oats out of (something with a lid would be ideal). This is a one serving recipe so a small dish will be best. Rinse and add the blueberries, stir. Lastly add the cinnamon and stir one last time. The almonds are best if you wait until the morning to top of the dish, this will prevent the almond from getting soggy. If you want add a dash of cinnamon on top.

If you aren’t a fan of blueberries or want to change it up you could always use other fruits such as strawberries or raspberries. I hope you enjoy and don’t take David’s side on thinking it tastes like paste :).
