A Mexican Fiesta

Last weekend we celebrated David’s 28th birthday with his family, the Mexican Fiesta way. He loves Mexican food as much as I do, so it seemed like a brilliant idea. The menu consisted of:

Appetizers

Pico de Gallo

Guacamole

Stuffed Jalapenos

Dinner

Shredded Chicken Tacos

Healthy Mexican Rice

Black Beans with Queso Fresco

Dessert

Tres Leches Cake

Jake’s dessert-churro like with cream cheese (unsure of the name)

It was a great dinner for a party since we could make a lot of the dinner ahead of time or at least have it prepared to cook. This way we could enjoy time with family when they arrived, like hanging with the beloved little Nora.

We actually cooked the chicken in a crock pot all day then shredded it for the tacos. Super simple and very delish! Here we are right before the feast. Look at all those colorful taco toppings-YUM!

Mexican Fiesta

For dessert I made a Tres Leches cake from the recipe collection of The Pioneer Women: http://thepioneerwoman.com/cooking/2009/09/tres-leches-cake/. This link includes step by step instructions and pictures-it is a great recipe! I had never made this cake so I was a little unsure if it would turnout, but it was to die for good. Creamy, moist, but not too sweet either!

Here is a shot of the birthday boy with his desserts. Next to the cake is a dessert Jake made, he said it was simple to make and it literally tasted like a cinnamon churro with cream cheese inside.

It was a great Mexicn fiesta and everyone was excited to celebrate David turning the big 28! Cheers!
