Chicken and Soba Noodles with Peanut Sauce

Race season is starting around Chicago as Spring begins. My favorite dish to make the night before a race is Chicken and Soba Noodles with Peanut Sauce. David made this dish before my very first race last year (Shamrock Shuffle-Chicago). It’s now become a staple dish for dinner for us. It’s great because it’s full of protein and light enough for a great pre-race dinner.

Ingredients

Chicken and Soba Noodles with Peanut Sauce

2 C cooked shredded chicken breast

2 T peanut butter

2 t sesame oil

4 T rice wine vinegar

6 T soy sauce (low sodium)

3 T water

3 garlic cloves minced

1/4 C green onions

2 t sesame seeds

1/8 C cilantro

1/4 C roasted peanuts chopped

2 bundles soba noodles

Bring a pot of water to a boil. Cook the soba noodles for 5 minutes. Make sure to rinse the noodles with warm water once drained. This will prevent the noodles from being sticky. Whisk together the peanut butter, oil, vinegar, soy sauce, water, and garlic to create the sauce.

Chop the green onions and cilantro. Mix together the noodles, chicken, and sauce. Top with green onions, sesame seeds, cilantro, and peanuts.
